400 g Pykeijan-lohta

Other ingredients
öljyä paistamiseen   
Escabeche-mausteliemi 
2 dl oliiviöljyä 
1 salottisipuli erittäin ohuina siivuina 
1 porkkana erittäin ohuina siivuina 
1 tl korianterin siemeniä  
hyppysellinen sahramia 
½ dl sherryetikkaa 
Cooking process
Leikkaa lohi kahdeksaksi palaksi. Paista palat kuumalla pannulla öljyssä nopeasti molemmin puolin. Pane lohipalat uuniin 125 °C:seen noin 5 minuutiksi, kunnes paistomittari näyttää 40 °C.    

Maustelientä varten paahda korianterin siemenet kuumalla kuivalla pannulla. Lisää joukkoon muut liemen ainekset, sekoita ja kiehauta. Kaada liemi lautasille lohipalojen päälle. Tarjoa esim. alkupalana.
